You'd probably have to add some high fat meat to it to get it to stick and not turn in to a a dry brick. I think most people grind it with beef or pork fat.

or you could add eggs...mom used to do that to venison and elk to get them to stick, and they are often handy...

That is what I do for meatloaf to get it to stick together better. I bet it would work...

Do not, I repeat, DO NOT use venison tallow!!! If you have a nice fat deer, throw away the chunky white fat globs...tallow goes rancid almost immediately after death and has a VERY bitter, nasty flavor. If you are freezing venison, be sure to cut off all tallow or even frozen it will taint the meat...every friend I have who claimed to hate venison? LOVED it when I offered some that wasn't made bitter and vile by tallow. :)

It is the one part of the deer that is, to me, totally worthless. I will find a use for most parts...meat, bone, hide, antlers if it's a buck...but the tallow gets tossed. ;)

We've never had a problem with using it before, never have had it go bad or taste funny either. Course if its not below 40, we do not hunt so maybe that has some thing to do with it.

Gee... What I wouldn't give for a nice thick venison steak... with an inch of good fat around the edge. The fat is tallowy in texture, but I find the flavour to be excellent.

Heh, Maggie? You had me at thick steak, lost me with the tallow. ;)

I wish I could share my venison with you though, my landlord just handed down a new rule...the freezer in the basement? That was part of the rented house? She's taking it out at the end of the week. I'm scrambling to find something to do with all the meat! I'd give you a dozen packs of backstrap steaks if I could!!!!! :(
