Is there a best time of day to breed? Or does it depend on the rabbits? What's the maximum recommended time between first and second breedings? If I'm breeding two does, how much time should I give the buck between does? (We're talking Cals here, if it matters.)

Depends on the time of year and the weather. In colder weather a nice sunny mid-day is good. In warmer weather, early morning or evening is usually better. But it does vary from rabbit to rabbit, so you may have to experiment a bit.

I usually breed in the evening. Since it's their "active time" same as the early morning, but I wouldn't trust my judgment in the morning.

I have done any time of day, but tend to breed in the morning, that's when I have the most time AND when I am most alert.
