Hello All! So tonight I'm going to make white chili but I'm going to use rabbit instead of chicken for the first time. I have read that rabbit takes seasoning better than chicken and I don't want to over season it. Does anyone have a general rule for seasoning when substituting rabbit for chicken in recipes? This is my first time cooking with rabbit other than just frying it and for some reason I'm nervous about it. Thanks in advance.

What seasonings do you use in your white chili? I've never felt I over-seasoned rabbit dishes, but you could use a little less, do a taste test when the meat is cooked through and then adjust them.

The recipe calls for lemon pepper, cumin, and fresh garlic. I omitted the lemon pepper and increased the cumin. It turned out pretty good but I think I should've left the lemon pepper in.
