I was wondering if anyone here has ever deboned a rabbit? I have watched a youtube video of a chef doing this and have thought about giving it a shot. Just curious if anyone else has experience with this.
Do what I do.. I would cook it first and then debone it. Boil or roasted, my husband will eat it better, if its off those sharp little bones. I just use it like cooked chicken in any recipe.
If I need raw deboned rabbit, we debone the big pieces, rear end, and loin, then cut the easy part off the front end, I then pressure cook the front ends, for about 30 min, and finish the deboning process.
I deboned the hind quarters and it was pretty easy and only took a couple seconds, I needed diced raw chicken for a recipe and didn't have any so I used diced raw rabbit hind legs. I just used my knife to cut the hindquarters off, then I traced along the bone and gently removed the flesh from the bone resulting in one large piece of meat per hindquarter. Very little was left on the bone and I tossed that into the freezer to make stock later.
