Hi,

you need:
1 Rabbit (mine had about 2lbs (950g) deboned meat)
half its meat weight onions
same its meat weight sauerkraut
lard
sour cream
sweet paprika powder
tomato paste
garlic
salt
bread dumplings

Pressure cook the rabbit for about 10 minutes with about 2 cups of water (keep the broth), debone it and cut the meat. Put the bones back in the broth and simmer them while you cook.

Roast the meat and the onions with lard.

When the last lot is light brown add the paprika (about 2-3 Tbsp.), stirr and deglace with the broth, the paprika should only be roasted for a short time, 10 seconds or so, or it gets bitter. Add about a Tbsp. crushed garlic, a cup of sour cream and about 3 Tbsp. of tomato paste.

Put all that in a pot, drain the sauerkraut and add it.

CAUTION: Some sauerkraut is REALLY sour, some is not, depends on who makes it. If it is unpleasantly sour rinse and drain it.

Add salt and/or a soup cube (if you like) and let it simmer for half an hour.

To be served with bread dumplings. For me, cooked potatoes are fine too.

P.s.: My stove looks much worse on the photos than in reality :?

Is that a wood cookstove? If so, you're my hero! Wish I could pop over for dinner then enjoy a some real german (or swiss or austrian) chocolate for dessert!
