Newbie here in AZ heritage breed for meat

So I am in Arizona. Looking to start with a trio of American Chinchillas. Going to do the traditional 'trio' to start with. I plan on having Silver Fox as my 'other' breed as well.
Hmmmm... Not sure what to say as I'm still learning. Ordering my cages in the next week or two and hoping to have my first trio by the end of May.
