Sold 23 head of dressed rabbit to the Restaurant's. I'm still trying to get
them to try a smaller rabbit. (to no avail) Almost every one of them want
a dressed rabbit in the 3 to 3.5 pound finished range. I can see their "need"
to get as many portions out of one carcass for economy's sake, but I feel
they're losing that delicate flavor by using an older, larger, rabbit.
I keep getting excellent ratings on my product, so I must be doing something
right.
Trying to get six does bred on a weekly basis. Grrr. With this colder weather,
the girls aren't wanting to raise their skirts. "It's too-chilly, Pop, let's wait."
Plus, they've been on vacation since the ninth of December.
Sold 45+ young does and 5 young bucks to some fellas on the eastern
side of the state. They'll be here around 3 this afternoon to pick up the
second half of their order. It's a three-hour, one-way, trip for them.
I've been trying to butcher 6-10 fryers per day for the restaurant trade. LOL
Made a head-count yesterday, and I've still got over 50 head to work up. I've
been plagued with insomnia all week, getting less than 3 hours per night
sleep. Handling those razor-sharp knives worries me. I DON'T need to cut
another nerve on my left hand. I've got two fingers right now that are nearly
useless--my index finger and ring finger.
Got my "Son-Crew" scheduled for Saturday morning to clean the rabbitry.
If it weren't for them, I'd be hard-pressed to continue. I thank the Almighty
every day for my three sons. They're a life saver for sure.
PLUS...The town's in an uproar over several administrators in the School
District. ((Continual phone calls from "upset" citizens.)) Looks like two,
maybe three, need to be terminated on the spot. That's a legal nightmare
the School Board must be very careful with. AND to think I volunteered for
this Hooey. :x :x TWICE..!!
It's been tough finding the time to work on my novel. I've got over 105,000
words down and I need about that many more to complete the project.
My designer is working on the cover, and my proofer is working through
the portion I've gotten done. She's "done" and waiting for more text. With
all that's going on, it's hard to get into the "zone" of concentrating on the
storyline and I miss that.
