Gwen made this for dinner last night and it really is "plum good" and not being a chef I appreciate the fact that it is "plum easy" as well as plum delicious. Gwen has used this as a chicken recipe for many years and it was totally easy to substitute rabbit.


Plum Good Rabbit
One rabbit divided into portions
½ cup soy sauce
½ cup plum jelly
¼ cup honey
¼ cup orange juice (optional)
1 clove garlic (crushed)
Mix the warmed soy sauce, jam, honey & garlic
and stir together until well blended.
Put rabbit pieces into shallow baking dish
And cover with sauce top and bottom
Bake in preheated oven at 325 for one hour,
basting occasionally.
 
Sounds interesting.
I'll see if I can get the boss to cook it one night.

You won't regret it, it really is quick and easy and delicious. The remaining sauce goes well over rice or mashed potatoes.
 
I've never even heard of plum jam. :oops:

I'm a big fan of orange marmalade... I bet this would be good with that, too! :p

Well now, that's just "plum crazy". :pokeeye: (sorry I just couldn't lat that go by)

Oh HEY, CORRECTION! :oops:

I wrote "plum jam" but it should have been "plum jelly", I think jam might be difficult to blend in with the other ingredients, jelly works better. Sorry.

Too funny! I just happen to have some plumb jelly I made this summer.
