Gwen made this for dinner last night and it really is "plum good" and not being a chef I appreciate the fact that it is "plum easy" as well as plum delicious. Gwen has used this as a chicken recipe for many years and it was totally easy to substitute rabbit.
Plum Good Rabbit
One rabbit divided into portions
½ cup soy sauce
½ cup plum jelly
¼ cup honey
¼ cup orange juice (optional)
1 clove garlic (crushed)
Mix the warmed soy sauce, jam, honey & garlic
and stir together until well blended.
Put rabbit pieces into shallow baking dish
And cover with sauce top and bottom
Bake in preheated oven at 325 for one hour,
basting occasionally.
