Rabbit (and 1 duck) liver pate

Hey all!

I have like a billion livers awaiting my usage in the freezer. So today I dug out a couple packages of rabbit livers and 1 duck liver. lol

I heated up some butter and sauteed onions and garlic and pepper.
Then I added brandy.
Then I added livers.
A little salt, a little more pepper, a little thyme.

Cook cook cook. Grabbed the food processor and blend blend blend with a few more butter chunks.

I've never cooked nor eaten pate before so I'm curious to see how it turned out. Smells good!
 
My husband who hates pate and has worked in very fancy restaurants LOVED this pate. He said he's never had pate better than this, even from very fancy chefs and that he wants MORE. :)

I fry rabbit livers in lard. Not as good as calf's liver but still quite tasty.
 
looks delicious! I just had some rabbit pate on my sandwich for lunch! My only suggestions are to add some tyme and a few bay leaves to the pate as you cook it. It's really good! Also I use the kidneys in the pate too...
