My daughter came to me today and said "Can I cook dinner and can I use a package of kickers?". After I stopped jumping up and down in glee I said "sure!".
She took some rabbit stock we made yesterday and put 6 "kickers" in there (hindquarters).
4 quarts stock
6 hindquarters
2 onions
3 celery ribs
garlic powder
ground pepper
pinch of salt
Cooked till meat tender, removed meat, let cool, removed from bone, put back in soup.
Added cream of celery soup.
Cooked to reduce (if too thing add 2 tbls corn starch to a 1/4 cup of cold water) to thicken.
She made the dumplings with 2 cups flour 3/4 cup cold water and a dash of salt. Mixed, rolled to 1/8 inch, and cut up into 1 inch squares.
Add dumplings at the end, when they float they are done.
Serve!
