Yes I call it Cream of Bunny Soup, my family loves it and, it's easy to make and, good for leftover cooked rabbit.
You need:
1 Medium onion - chopped
3 Large ribs celery - Chopped
3 Medium carrots - chopped
2 TBS butter or margarine
Salt and pepper to taste
3/4 to 1 lb cooked, deboned, cubed rabbit meat.
1 larger or 2 regular cans Cream of Mushroom soup
3 Cups water.
Saute the vegetables in the melted butter until the onions are soft but not browned at all. Add the water, stir in the soup until it's smooth and there are no lumps. Add the rabbit meat. Simmer 30 mins to 1 hour. Serve as is with biscuits or rolls, or serve over cooked rice.
