So I'm making this and it smells wonderful! I'm making it in the crockpot. Browned the meat, then slow cooking it.

I wanted something to use up hearts and kidneys so I grabbed a couple ladles of the sauce and simmered them in the sauce.

OMG

I've never had kidneys or hearts from any animal before. But this was gooooooood!

I ate 8 kidneys and 4 hearts. lol
 
This turned out soooo good.

One change, I added a lot of garlic and some rosemary.

I finally made this last night. Followed the recipe pretty closely. I used fresh rosemary, thyme, parsley, and bay leaf as the "bouquet garni," and a chardonnay for the wine, because that's what I had, and sour cream instead of creme fraiche. Delicious, and really simple.

I'm so glad so many folks are trying this. It really is good, and you can do all sorts of substitutions!
