This isn't actually done yet, but I have high hopes!
I started a rabbit in the crock pot last night with
- 4 large potatos, peeled/sliced
- 1 cup baby carrots, chopped
- 2 cups of a sweet wine
- enough water to cover
I'm allowing the homemade egg noodles (Lord help me, they never turn out right) to dry as I type.
The rabbit meat will be removed from the bone and the braising liquid reduced while the pasta cooks. The pasta will be drained, shocked, then transferred to the reduced liquid. Toss in meat + veggies from crock pot.
I will report on how this endeavor goes after dinner.
