Yes, the long grass is safe - again, just introduce slowly if they've never had it before. Like Myrkari said, make sure to identify anything before feeding. When in doubt, err on the side of caution :)
There are pros and cons no matter what you choose - best bet imo would be to visit some local rabbitries and rescues and ask your questions. Any breeder/rescuer worth their salt will help you whether you buy from them or not - if they won't or if they're rude...run!
I've never had that happen - ears, yes, teats, no - so I would separate her from the other kids. As long as it stops, I wouldn't expect any permanent damage or problems as she's young and should heal up just fine.
It's true this place is awesome! Where else can you find this vast array of new and experienced rabbit raisers - raising for different purposes in a lot of cases - all getting along and helping each other?

I feed my does grass and weeds throughout their pregnancy and I don't stop when the kits come out and start nibbling, so for me I feed them grass and whatnot right off the bat. Never had a problem.
Some of the greens that are really good to start with are dandelion leaves as they aid digestion...
Not sure if they'll be in or out - probably a combo since we have housing for both. I won't be bringing too many with me and any extras can always go to freezer camp if I can't find homes for them. I actually really want to start working with pelts, so that wouldn't be too bad :)
