I got my trio from a breeder that admittedly didn't handle their rabbits often. They really dislike being touched or held. One of my does is a growler.
Any tips on winning them over? Would you guys recommend more handling, rather than giving them space? Any special treats your rabbits really go...
I'd create a cross-breeze by taking out panels on either end of the cage line-up. I think with the misters and fans going, that should keep them cooler. 103° is no joke!
Sorry to hear the infection is spreading, it's definitely not looking good. I personally would euthanize; the stress and pain of treatment seems to me like it would be too much for him. I don't think I would eat the meat, but like a commenter above, would feed to meat eating animals. Not a fun...

I've had luck with diatomaceous earth getting rid of unwanted critters as well. I buy the 'food grade' version in large bags to save on cost. I've also heard of folks mixing it with pellets to get rid of internal parasites, but have yet to try that myself.
