I just had my first harvest here and while I am planning on tanning the pelts I was thinking of doing something with the ears and tails I saved.

What would be the best way to dry/preserve the ears and tail tuffs for cat toys and dog chews? Hang dry the ears? Salt them? I know I'll need to trim out the bones from the tail but where do I go from there?

The tails will dry out really fast with the bones removed. You probably don't need to do anything, aside from leaving them in a dry location overnight. I'd be shocked if they took much longer than that.

I wouldn't salt anything for pets, just to help regulate salt intake.
Ears probably dry well in a dehydrator, or on low in an oven. They will have slightly higher risk of spoiling than the tails, but shouldn't be too tricky.
