Okay - one step closer to eating our own. My husband's brother came out to visit for a week and the two of them went rabbit hunting with our beagles. He was actually coming out to take one of our girls home with him and they shot two wild rabbits. Since I had already purchased a meat grinder, I decided to try it out.

The internet has a great video on how to use your grinder to grind rabbit meat. After soaking for a day in salt water, I deboned the meat, rinsed and dried the pieces and then I put the meat back in the refrigerator over night so it would be cold when I started. I did not add anything to the meat and it came out great. It is more crumbly than beef and pork but it made a wonderful chili! Everyone loved it - even my girls.

If you put some pork belly in with it you can make patties and sausage.
