Ingredients:
Rabbit giblets, chopped (can be any or all of: hearts, livers, kidneys)
Olive oil
Onion soup mix or golden onion soup mix (or seasoning to taste)
Flour
Water or stock
Saute giblets in olive oil over medium heat, stirring frequently until mostly cooked, about 8 minutes.
Add soup mix or desired seasonings, stir to coat giblets.
Add several tablespoons or more of flour, however much you think you might need to make a reasonably thick gravy with the amount of giblets you have. Stir to coat giblets.
Increase heat to medium-high, add water or stock a cup or two at a time, stirring constantly to allow to thicken, adding liquid until it is at the desired consistency.
Serve over rice or spaghetti.
At the top of the bowl are sliced rabbit livers, sauteed in butter and minced garlic.
