I butchered 4 ducks yesterday eve and i don't have much experience in cooking duck.
They are each 5-6 pounds. Going to let them rest in ice water one more night.
Any tips in cooking, or tried and true recipes would be very much appreciated :)
 
MMMmmmm... Roast duck! :D

It's been years since I've had it but I used to serve it with Cumberland Sauce. I can't find the recipe I used to use, but this one is close. I think the one I used (which came from Tabasco sauce, but they've changed theirs on the website) also had perhaps 1/4 cup of sugar in it. I used to glaze the duck with it while roasting and then serve the sauce separately at table as well.

I can't wait for my guys to start laying again. Going to raise up more next year!
I ended up salting and roasting for my first try. Flipped it a few times while it was cooking. The skin was crispy and mouth watering...picked the bird clean. Family loved it. The fat from the roasting was poured into a container for potatoes later....so fricken good!
