A "tail" of three dishes

I slow cooked two rabbits yesterday in taco seasoning. Last night I pulled the meat off the bones and ended up with three pint jars of seasoned meat.

Sooo what to do with this goodness?

I've got three tortillas...

I grab three pie pans, spray some oil, and push a tortilla down into each one.

I'll make three different dishes. 1 quiche, 1 with taco seasoning, 1 with enchilada sauce.

Cheese, black beans, refried beans, cheese, onions, tomatoes, cheese, olives, did I mention cheese? lol

I can't wait to see how they all turn out!
 
They are in the oven.

2 ended up being the same, as I made so much quiche filling that... Well I had to make two or I'm not sure what I would have done. lol

So 2 quiches:

2 pie pans
split all between two
2 tortillas
corn
black beans
half onion
pepper from my lanai....
7 eggs
1 cup goats milk
lots of 3 cheese blend
sliced olives
taco seasoning
rabbit meat

mix mix mix and put into the tortilla lined pie pan and bake.

Hope it's good.

The other one is most of the stuff from above but minus the eggs/milk/taco seasoning and added enchilada sauce

Your making me very hungry, which is not good for this time of night!
What a very creative, and tasty dish.
I'm going to have to add this one to my cooking bucket-list.
